Storage tips for artisan sourdough bread.

Sourdough bread has natural preservatives due to the lactic-acid bacteria present in the sourdough culture. When stored properly, you will enjoy bread that stays fresh longer without the help of commercial preservatives.
The storage recommendations below are based on many years of experience baking and consuming bread in our home.

Freeze it!

We recommend freezing on the day of purchase what you won’t eat within the next three days.
(see freezing instructions below).

Store what you eat properly!

Avoid using plastic bags, as they will soften the crust of your bread and trap humidity, potentially leading to mold. Never place sourdough bread into the fridge; it’s the fastest way to make it go stale.

There are several ways to store bread to preserve its crust and crumb and prevent it from going stale. Some work better than others:

Unglazed clay pot - Our preferred option
The clay's breathability allows the bread to breathe while keeping it moist enough to prevent mold. The bread’s crust will be maintained for 3-4 days, and the crumb will not dry out. Even slices of bread will stay fresh for a few days. Our favorite clay pot is the “Le Cloche” bread baker made by Sassafras. Available on Amazon for approximately $65.

Bread Box.
They come in various styles and materials. We prefer wood over metal. Bread will stay fresh for 2-3 days. While a little less effective than a clay pot, they still work pretty well.

Linen Towel or Bread Bag.
Cover the bread with a linen towel and place the cut side onto a wooden board. Or wrap it in a linen bread bag. This method will keep the bread fresh for 1-2 days (longer with more humidity in the air during the summer time). It is the least effective method.


 

How to freeze bread

Wrap bread in parchment paper or plastic wrap and place in a freezer bag.

To freeze sliced bread, separate single slices or portions with parchment paper and then place in a freezer bag. Take out slices as you need them.

To thaw, remove the bread from the bag and let it sit on the counter, covered with a linen towel. Once thawed, transfer it to any of the storage options listed above.

Special storage tips for our Rye breads
Our authentic European Rye breads contain a significantly higher amount of water than regular Sourdough wheat breads, which increases their shelf life to up to 1 week or even longer. Our 100% Rye breads are best stored at room temperature, tightly wrapped in plastic.
